Chankonabe is a Japanese stew (“nabemono” or one-pot dish) traditionally cooked and eaten by sumo wrestlers in order to gain and retain weight. When served in moderation the ingredients make for a healthy meal: chicken, thinly-sliced pork, fish, shrimp, fresh and deep-fried tofu or bean curd, and an assortment of vegetables (in the photo: Chinese cabbage, mushroom, burdock, green onion).
